The rolled tortillas are filled with a hearty mixture of cheese, chicken and green chiles, and then topped with a creamy sauce and more cheese. I sometimes use leftover turkey instead of chicken. —Karen Bourne, Magrath, Alberta. Prepare the EnchiladasCover both sides of the tortillas in green enchilada sauce. Spoon in filling and and place in pan fold side down. Repeat until you have filled all your enchiladas. Cover with remaining sauce. Sprinkle cheese all over. Bake for 20 minutes at 350. Garnish with cilantro, and enjoy!
